Ingredients for Tau foo fah:
- 1 tbsp. The Perfect Purée Sweet Ginger, thawed
- 2 pandan leaf, cut into 2-inch pieces
- 1 cup gula melaka (can substitute with muscovado or jaggery)
- ½ cup water
- 1 organic silken soft tofu (bean curd)
- fresh ginger, peeled and sliced
Method for Tau foo fah:
- Add water, pandan leaves and gula melaka to a small saucepan. Bring to a slow simmer on medium heat and then place on low heat until liquid is slightly syrupy.
- Add The Perfect Purée Sweet Ginger to taste and remove from heat.
- Portion soft tofu and drain lightly with the palm of your hand.
- Place tofu, sliced ginger pieces and ginger syrup when plating.
- Serve immediately.
