Ingredients for Yabba Dabba Doozy:
• 1 ½ oz. Charbay Blood Orange Mandarin Vodka
• ¼ oz. Disaronno Originale
• ½ oz. grenadine (housemade)
• ½ oz. limoncello (housemade)
• yuzu airs
Ingredients for Grenadine:
• 1 oz. vodka
• 32 oz. pomegranate juice
• 4 cups sugar
• 1 tsp. orange flower water
Ingredients for Limoncello:
• 32 oz. high proof neutral grain spirit
• 8 oz. simple syrup
• 10 lemon peels
Ingredients for Yuzu Airs:
• 15 g. The Perfect Purée Yuzu Luxe Sour blend, thawed
• 3 g. grenadine (housemade)
• 2 g. water
• 1 g. soy lecithin
Method for Grenadine: Combine pomegranate juice and sugar and heat until sugar is dissolved. Remove from heat and let cool. Add vodka and orange flower water. Keep chilled.
Method for Limoncello: Combine neutral grain spirit and lemon peels in a tightly sealed container. Let rest for 30 days in a cool, dark spot. Strain out lemon peels and add simple syrup.
Method for Yuzu Airs: Combine all ingredients in a Vitamix and pulse slowly until soy lecithin is dissolved. To serve, whip with an immersion blender for instant foam or submerge in aquarium bubbler for continuous foam.
Method for Yabba Dabba Doozy: Combine all ingredients (except yuzu airs) in a shaker with ice. Shake well. Strain into Nick & Nora Glass. Garnish with yuzu airs.
