NAPA, California – March 2009 – Since 1988, The Perfect Purée of Napa Valley’s premium fruit and vegetable purees have been an essential ingredient for the country’s top chefs, pastry chefs and beverage professionals.  The Perfect Purée is pleased to introduce five new flavors from the Culinary TraditionsTM line at the International Restaurant & Foodservice Show in New York March 1-3 and at the Las Vegas Restaurant & Bar Show March 3-4 in Las Vegas.

The expansion of the Culinary TraditionsTM line is a response to today’s flavor trends and The Perfect Purée’s heritage for producing innovative flavors. The new flavors are made from perfectly ripe fruits carefully sourced around the world and are kosher certified and natural with no artificial additives, preservatives or colorings.  All new products can be used in either culinary or beverage applications.

  • Carmelized Pineapple Concentrate – Smoky notes will remind you of Pineapple Upside Down Cake. Great for pastry, sorbet, mousses or cocktails.
  • Citrus Sensation Concentrate- A mélange of classic fruit concentrates that transforms into a floral citrus sensation with a kiss of honeysuckle. Lends artistry to recipes for cocktails, sauces, glazes and more.
  • Fruit of the Cocoa Puree – The sublime and subtle tropical fruit that surrounds the cocoa beans in the cocoa pod. Evokes citrus, lychee and guava. Its sweet tropical floral notes and unique custard-like texture make it ideal for mousses, pastry creams, sorbet, ice cream, sauce for seafood and cocktails.
  • Mandarin/Tangerine Concentrate – This tangy citrus concentrate is a duo of pure perfection in flavor and balance. For a new taste sensation add it to your recipes for vinaigrettes, sorbets, pastry creams, juice and drink bases and sour mix.
  • Red Mixed Berry Puree – Strawberry, Cranberry, Blueberry, and Cherry have been combined to create a symphony of berry flavors and an antioxidant punch. Create incredible vinaigrettes, sorbets, sauces for meat, mousses or cocktails.

The new purees and concentrates are available for foodservice, packed six – 30 ounce jars per case.  All products carry a “Best By” date of 24 months with 7 – 10 days shelf life once thawed and refrigerated.  The containers are recyclable and reusable store ‘n’ pour jars.  Sample boxes are available through Perfect Purée’s distributors.  The Perfect Purée is distributed in the U.S., Canada and Mexico.
