Polynesian Perfection

    • 1 oz. Hanger One Kaffir Lime Vodka
    • 1 oz. St. Germaine Elderflower Liqueur
    • 2 oz. The Perfect Purée Lychee Puree,  thawed
    • 1/2 oz. The Perfect Purée Pink Guava Puree,  thawed
    • 3/4 oz. fresh lemon juice
    • 1/2 oz. simple syrup
    • fresh slice of guava (for garnish)
    • fresh slice of lychee (for garnish)
    • orchid (for garnish)
Method:
1. Prepare St. Germaine-Guava Foam and set aside. Combine ingredients into a cocktail shaker with ice. Shake and pour into a highball glass. Top with St. Germaine-Guava Foam and garnish with a slice of guava, lychee and orchid. Serve.
St Germaine-Guava Foam:
    • 5 oz. St Germaine Elderflower Liqueur
    • 5 oz. The Perfect Purée Pink Guava Puree,  thawed
    • 1 oz. fresh lemon juice
    • 5 oz. pasteurized egg whites
Method:
1. Use a cream whipper/dispenser to combine and whip ingredients.
