Ingredients:

• 1 1/2 oz. Etsu Japanese Gin
• 1/2 oz. Kiwi-infused Agwa Liqueur
• 1/2 oz. Passion Fruit Syrup
• 1/4 oz. Rich simple syrup
• 1/4 oz. Lemon juice
• 1/4 oz. Lime juice
• Cava

Method:

1. In a cocktail shaker, combine all ingredients, minus cava. Shake, strain, and serve in a coupe glass. Top with cava and garnish with a kiwi slice.

Ingredients for the Passion Fruit Syrup:

• 993 g. The Perfect Purée Passion Fruit Concentrate, thawed
• 750 g. sugar

Method for the Passion Fruit Syrup:

1. Combine all ingredients in a bowl. Use an immersion blender to combine.
