Ingredients for Soul’s Return:
- 1 ½ oz. Charbay Clear Vodka (Thyme infused)
- ½ oz. Rhum Clément Créole Shrubb Orange Liqueur
- 1 oz. caramelized pineapple shrub
- ½ oz. fresh squeezed lime juice
- 2 dashes orange flower water
- 1 oz. coconut milk
- dehydrated pineapple, garnish
Ingredients for Caramelized Pineapple Shrub:
- 1 part. The Perfect Purée Carmelized Pineapple concentrate, thawed
- 1 part sugar
- ¾ part vinegar
Method for Caramelized Pineapple Shrub: Combine equal parts The Perfect Purée Carmelized Pineapple and sugar (by weight). Stir, cover and refrigerate for at least 24 hours. Add ¾ vinegar (based on weight used for concentrate and sugar).
Ingredients for Charbay Clear Vodka (Thyme infused):
- 1 L. Charbay Clear Vodka
- 1 bunch thyme
Method for Charbay Clear Vodka (Thyme infused): Infuse the Charbay Clear Vodka and thyme for two days.
Method for Soul’s Return: Combine all the ingredients, excluding the coconut milk and dehydrated pineapple. Stir. Add coconut milk. Stir and refrigerate for one hour. Strain over a coffee filter. Serve over one large ice cube in rocks glass, give a little stir. Garnish with a dehydrated pineapple and enjoy.
