| • | 3/4 oz. The Perfect Purée Passion Fruit Concentrate, thawed | 
| • | 1/2 oz. The Perfect Purée Mandarin/Tangerine Concentrate, thawed | 
| • | 1 oz. ginger mix | 
| • | 1/2 oz. lemon juice | 
| • | 1/2 oz. egg white (optional) | 
| Method: | |
| 1. | Place all ingredients in mixing glass. Add ice, shake, and strain into a tall martini glass. | 
| Ginger Mix: | |
| • | 2 oz. The Perfect Purée Ginger Puree, thawed | 
| • | 2 oz. sugar | 
| • | 4 oz. water | 
| Method: | |
| 1. | Add all ingredients in saucepan, heat until sugar dissolves. Cool and set aside. |
