Ingredients for Carmelized Pineapple Jicama Citrus Salad:
- 3 tbsp. The Perfect Purée Carmelized Pineapple Concentrate, thawed
- ½ tsp. chopped garlic
- ½ tsp. salt, plus more to taste
- 1 tbsp. fresh lime juice
- 6 tbsp. olive oil
- ½ tsp. black pepper
- 8 clementines or other citrus fruit, peeled and sliced or cut crosswise
- 1 lb. jicama, peeled and cut into matchsticks
- 1 small red onion, thinly sliced
- ¾ cup packed cilantro sprigs
- ½ cup crumbled queso fresco or mild feta
- 1/3 cup raw green (hulled) pumpkin seeds, toasted
- Tastecraft Freeze-Dried Dragon Fruit Crumble
Method for Carmelized Pineapple Jicama Citrus Salad:
- Mince and mash garlic to a paste with salt.
- Whisk together the garlic, lime juice, Carmelized Pineapple Concentrate, oil, and pepper in a large bowl.
- Add clementines and/or other citrus fruits, jicama, onion, and cilantro before serving, and gently toss.
- Season with salt to taste.
- Sprinkle with cheese and pumpkin seeds, and serve
