Ingredients for ExpelliYUMus:
• 2 oz. Charbay Blood Orange Mandarin Vodka
• 1 bar spoon Amaro Nonino
• ¾ oz. The Perfect Purée Sweet Ginger Puree, thawed
• ½ oz. lemon juice
• ½ oz. spiced pear syrup
• Halloween Charbay vodka gummy
• pear foam
Ingredients for Halloween Charbay vodka gummy:
• 3 cups Charbay Blood Orange Mandarin vodka
• 1 ½ cups water
• 1 ½ cups granulated sugar
• 6 tbsp. unflavored gelatin powder
Ingredients for Spiced Pear Syrup:
• 10-12 pears (chopped)
• 3-4 L water (enough to cover pears)
• whole spices
o cardamom pods
o cloves
o nutmeg (a few shavings)
o fresh ginger slices
o cinnamon sticks
o allspice berries
• granulated sugar (qty equal to volume of strained liquid)
Ingredients for pear foam:
• 2.4 L spiced pear syrup
• 2.4 L water (1.2 L hot water to dissolve gelatin, 1.2 L cold water to cool the mixture)
• 6 strips of gelatin
Method for Spiced Pear Syrup: In a large pot, combine chopped pears and spices with enough water to cover. Simmer until pears are soft and aromatic (approx. 30-45 minutes). Strain the liquid and measure it. Add an equal amount of granulated sugar to the liquid (1:1 ratio). Heat to dissolve sugar fully. Let cool before using.
Method for pear foam: Dissolve 6 gelatin strips in 1.2 L of hot water. Once fully dissolved, stir in 1.2 L of cold water to bring the temperature down. Combine the gelatin solution with 2.4 L of spiced pear syrup. Divide evenly as if using 6 ISI canisters. Charge every time with 1 NO2 cartridge, shake well, and refrigerate until service.
Method for Halloween Charbay vodka gummy: Gently heat vodka and water in a saucepan (do not boil). Add sugar and stir until dissolved. Sprinkle gelatin powder over the warm liquid and let bloom for 5 minutes. Stir until gelatin is fully dissolved and smooth. Pour into silicone molds and refrigerate until fully set.
Method for ExpelliYUMus: Combine all ingredients (except gummy and pear foam) in a shaker with ice. Shake well. Strain into a rocks glass over fresh ice. Top with pear foam and a Halloween Charbay vodka gummy.
