    • 2 oz. Aviation Gin
    • 1 barspoon The Perfect Purée Ginger Puree,  thawed
    • 3/4 oz. freshly squeezed lemon juice
    • 1/2 oz. simple syrup
    • 2 oz. club soda
    • wide lemon disc for garnish
    • large mint sprig for garnish
Method:
1. In a pint mixing glass, add 1 barspoon of Ginger Puree along with all gin, juice, and syrup. Swizzle to integrate, fill glass with ice, and shake with a Boston Shaker vigorously for 6 seconds. Add club soda and strain over fresh ice into a Collins glass. Garnish with a wide lemon disc and large mint sprig. Serve.
