For the drink: | |
• | 1 1/2 oz. Weed Cellars Bourbon |
• | 3/4 oz. The Perfect Purée Peach Ginger blend, thawed |
• | 1 oz. Peach Shrub |
• | 5 drops Palisade peach bitters |
Method for the drink: | |
1. | Combine all ingredients with ice, stir and strain over ice sphere into bucket glass. Garnish with fresh peach slices |
For the Peach Shrub: | |
• | 3 peaches |
• | sugar |
• | 1/2 cup champagne vinegar |
Method for the Peach Shrub: | |
1. | Remove the pit from 3 organic very ripe peaches and weigh them with a scale. |
2. | Muddle peaches with equal amount by weight sugar. |
3. | Seal in container overnight so the sugar and peaches make a syrup. |
4. | Stir well and pour champagne vinegar over the peach sugar mixture. |
5. | Mash the remaining peach sugar in sieve to get out all the liquid. Fine strain the vinegar/peach syrup again to remove particles that may have slipped through. Allow to rest sealed in the refrigerator for at least 24 hours to incorporate flavors. |
