Ingredients for Hibiscus Highball:
• 1 oz. High Wire Distilling Hat Trick Gin
• 1 oz. High Wire Distilling Southern Amaro
• 1 oz. The Perfect Purée Sweet Hibiscus, thawed
• 2 oz. tonic water (Fever Tree, or your favorite tonic water will do!)
• ½ oz. mint simple syrup (recipe below)
• ¼ oz. lemon juice
• 1 dropper absinthe
• 1 mint sprig (garnish)
Ingredients for Mint Simple Syrup:
• 1 cup sugar
• 1 cup water
• 1 cup mint leaves
Method for Mint Simple Syrup:
Add 1 cup of sugar and 1 cup of hot water to a container or mixing bowl and stir. Once sugar is dissolved, add mint leaves and steep for 10-15 minutes. Strain through fine mesh strainer to remove mint leaves. Let the syrup cool completely before refrigerating. This will last for at least 2 weeks in the fridge.
Method for Hibiscus Highball:
Add all ingredients except mint sprig to a collins or high ball glass, add a few ice cubes and stir to incorporate ingredients. Top with crushed ice and mint sprig.
