| • | 1 ½ oz. Charbay Green Tea Vodka |
| • | ½ oz. The Perfect Purée Sweet Ginger, thawed |
| • | ¼ oz. lemon juice |
| • | 2 oz. pear shrub |
| Method: | |
| Pour ingredients into cocktail shaker with ice, shake vigorously. Strain into martini glass and garnish with dehydrated pear. | |
| Pear Shrub: | |
| • | 8 Bartlett Pear (cored and cut into 2 inch pieces) |
| • | 8 sprigs thyme (leaves removed from stem) |
| • | 1 cup sugar |
| Method: | |
| Puree ingredients in Vitamix until smooth, pour into container. Add approximately ½ cup pear vinegar, to taste, should be sweet and a little sour. Substitute apple cider vinegar or white balsamic if you like. | |
