| • | 1 1/2 oz. The Perfect Purée Thyme & Citrus, thawed |
| • | 1 oz. lemon juice |
| • | 2 dashes of Bitterman’s Orchard Street Shrub |
| • | 2 dashes of Bitterman’s Boston Bittahs |
| • | Sparkling water |
| • | Edible pansy (for garnish) |

| 1. | Combine all liquid ingredients except sparkling water into a cocktail shaker with ice and shake vigorously until thoroughly combined. Strain into an iced 10 oz. Collins glass. Top with sparkling water. Garnish with an edible pansy. |
