| • | 2 oz. The Perfect Purée Passion Fruit Concentrate, thawed |
| • | 8 oz. water |
| • | 1 tbsp. potato starch |
| • | 2 tbsp. sugar |
| • | 1 tbsp. honey |
| • | 3 tsp. Dijon mustard |
| • | 1/2 tsp. salt |
| • | 1 oz. canola oil (optional) |
| Method: | |
| 1. | Combine the water, starch, sugar, and honey in a small saucepan. Heat to a boil, whisking constantly. Pour pan contents into a stainless bowl and allow to cool. |
| 2. | Add the remaining ingredients to the bowl and whisk thoroughly. Transfer the dressing to a covered container and refrigerate until use. |
