• | 3/4 oz. The Perfect Purée Carmelized Pineapple Concentrate, thawed |
• | 1/4 oz. The Perfect Purée Red Raspberry Puree, thawed |
• | 2 oz. Cazadores reposado |
• | 1/4 oz. chipotle chile juice (from canned chipotle chiles) |
• | 1/2 oz. agave nectar |
• | 3/4 oz. fresh lime juice |
• | raspberries for garnish |
Method: | |
1. | Combine all ingredients except foam and garnish, into a mixing glass. Add ice and shake with a Boston Shaker. Serve over the rocks in a margarita glass. Top with foam. Garnish with a couple raspberries. Serve. |
Pineapple & Raspberry chipotle foam: | |
• | 4 oz. egg white |
• | 4 oz. Cazadores Reposado Tequila |
• | 6 oz. pineapple juice |
• | 4 oz. The Perfect Purée Red Raspberry Puree, thawed |
• | 2 oz. chipotle chile juice (from can chipotle chiles) |

1. | Combine ingredients and add to a whipped cream dispenser with CO₂. |
