Nectarine Ginger Tarts

1 tbsp. The Perfect Purée Ginger Puree, thawed
1 sheet cold puff pastry
4-5 ripe but firm nectarines, halved, pitted, cut into thin slices
Egg wash
1. Pre-heat oven to 350F. Place parchment paper on a baking tray.
2. Cut thin slices from nectarine, place in a bowl.
3. Cut puff pastry using a 3 inch round cutter.
4. Spread ginger puree evenly on the puff pastry.
5. Arrange the nectarine slices in a concentric circle.
6. Brush with egg wash.
7. Place tarts on the prepared baking tray.
8. Bake in the oven for about 30 minutes or until golden brown.
9. Serve warm with a dusting of icing sugar or for an indulging dessert, add a dollop of vanilla ice cream.
Option: The tarts can be made ahead and frozen until needed.
