| • | 1/2 oz. DiSarono Amaretto |
| • | 1/2 oz. Cointreau Noir |
| • | 1/4 oz. Domain de Canton Ginger Liquor |
| • | 1/2 oz. The Perfect Purée Pink Guava Puree, thawed |
| • | 1 oz. lime sour |
| Method: | |
| 1. | Combine ingredients into a mixing glass with ice. Shake with a Boston Shaker and strain into highball glass. Layer with .5 oz Bacardi Select. Top with hibiscus-ginger guava foam. Garnish with sugar cane stick and lime twist and serve. |
| 2. | Foam: Combine 5 oz Domain de Canton Ginger Liquor, 5 oz Pasteurized Egg Whites, 4 oz Pink Guava Puree, 1 oz Hibiscus Syrup, and 1.5 oz Lime Juice. Shake before using. |
