Red Jalapeño Mac & Cheese

Ingredients for Red Jalapeño Mac & Cheese:

The Perfect Pureé Red Jalapeño Puree, thawed
• 2 cups American cheese (Velveta or similar), grated
• 2 cups cheddar cheese, grated
• 1 tbsp. oil
• 1 tbsp. white vinegar
• ¾ cup raw Spanish onion, puréed
• ½ tsp. salt
• 1 tsp. black pepper, fine ground
• 2 cups heavy cream
• 2 tsp. white wine

Method for Red Jalapeño Mac & Cheese:

1. Sauté onion in oil and season with salt and pepper. Cook out the raw smell, but do not brown.
2. Add American cheese and heat gently to melt, then add in the cheddar cheese, vinegar and white wine. Continue to heat and stir gently until the cheese melts.
3. Remove from heat and chill.
4. Remove portions needed from fridge. Add The Perfect Purée Red Jalapeño to taste assuming approximately 1:10 ratio puree to cheese sauce.
5. Gently reheat in microwave or on stovetop.
