1 oz. St. George Terroir Gin
1/2 oz. Californian Pinot Noir
1/2 oz. The Perfect Purée Green Apple Puree, thawed
1 oz. matcha tea syrup
3/4 oz. lime juice
1 egg white
Method:
Combine and shake all ingredients except the Californian Pinot Noir. Pour into old-fashioned glass. Top with Californian Pinot Noir and garnish with star anise.
