Ingredients for Spiced Stone Cordial:
- 1 cup The Perfect Purée Apricot Puree or White Peach Puree, thawed
- 16 oz. water
- 16 oz. honey
- ½ tbsp. whole cardamom
- ½ tbsp. black pepper
- ½ tbsp. cumin
- ½ tbsp. fennel
- ½ tsp. whole cloves
- ½ tsp. sea salt
Method for Spiced Stone Cordial:
- Make 32 ounces of honey simple syrup by combining 16 ounces of water and 16 ounces of honey in a saucepan. Stir over low heat until the honey is dissolved. Remove from heat and let cool. Do not boil.
- Gently heat a sauté pan to toast the spices, adding each of the spices and lightly toasting. Set aside to cool. Once cool, combine spices, salt, simple syrup, and purée and purée in a blender until smooth.
