Ingredients for The Bitter Nest:
• 1 oz. Planteray Pineapple Rum
• ½ oz. Planteray Original Dark
• ½ oz. Campari
• ¼ oz. Giffard Caribbean Pineapple
• 1 oz. The Perfect Purée Tamarind Puree, thawed
• ½ oz. demerara syrup
• ¼ oz. lime juice
Method for The Bitter Nest:
Shake all ingredients and strain into rocks glass, tiki glass, or collins. Top with Pineapple, Basil, and Black Pepper Cocktail Air. Combine Giffard Caribbean Pineapple, Perfect Purée Thai Basil and Black Pepper blend, lime, and demerara. Find the weight and add 1.5% Lecithin Powder. Find strain and blend into liquid. Place in tall container and add a fish tank bubbler. Scoop onto cocktail. Garnish with pineapple frond and side of Tastecraft Freeze-Dried Pineapple.
