Ingredients for The Great Grassby:

• 2 oz. lemongrass-infused Charbay Blood Orange Mandarin Vodka
• ¼ oz. The Perfect Purée Thai Basil & Black Pepper blend, thawed
• ¼ oz. clarified lemon juice
• ¼ oz. Lillet
• yuzu foam

Ingredients for lemongrass-infused Charbay Blood Orange Mandarin Vodka:

• 1 bottle Charbay Blood Orange Mandarin Vodka
• 3 lemongrass stalks

Ingredients for clarified lemon juice:

• freshly squeezed lemon juice
• agar

Ingredients for yuzu foam:

• 12 oz. The Perfect Purée Yuzu Luxe Sour blend, thawed
• 1 oz. lemon juice
• 1 oz. egg white

Method for lemongrass infused Charbay Blood Orange Mandarin Vodka: Peel and cut lemongrass stalks. Combine vodka and lemongrass. Let sit for 24 hours.

Method for clarified lemon juice: Add 5 g of agar for every 1 qt of lemon juice. Refrigerate overnight. Use a coffee filter to strain.

Method for yuzu foam: Combine ingredients in an ISI cream whipper. Secure lid tightly. Charge, then shake. Repeat the process once more.

Method for The Great Grassby: Combine all ingredients (except yuzu foam) in a mixing glass with ice. Stir to combine. Pour into a highball glass on the rocks. Garnish with yuzu foam.
