The Kiwi Verde1 drink Alexander Greene, Bartender, Shangri-la |
Ingredients for The Kiwi Verde:
• 1 ½ oz. Sotol
• 1 oz. Kiwi Syrup
• 1 oz. Salsa Verde
• 6 dashes of saline
Ingredients for Kiwi Syrup:
• 1 oz. The Perfect Purée Kiwi Puree, thawed
• 3/4 oz. simple syrup
Method for Kiwi Syrup:
Combine and strain through a large fine mesh strainer to thin.
Ingredients for Salsa Verde:
• 8 tomatillos
• 1 serrano
• bundle of cilantro
• 500 ml. lime juice
Method for Salsa Verde:
Roast and cool 8 tomatillos. Once cooled, blend with one serrano and bundle of cilantro. Combine 1 to 1 ratio of blended “salsa verde” to lime juice. Strain through super bag to thin out and remove any seeds.
Method for The Kiwi Verde:
Combine Kiwi Syrup and Salsa Verde mix. Add 6 dashes of saline. Shake and double strain.
