    • 2 oz. Bombay Sapphire Gin
    • 1 oz. The Perfect Purée Yuzu Luxe Sour Blend,  thawed
    • 1/2 oz. fresh lime juice
    • egg white
    • 3 drops Angostura Bitters
1. Put all contents (except the bitters) into a cocktail shaker. First dry shake all the ingredients (shaking without ice) to emulsify the egg white in the mixture. Then add 1-2 ice cubes and shake the contents again to chill the mixture, shake vigorously until the ice completely breaks and combines within the entire cocktail. Double strain the cocktail into a coupe glass and let the it sit for about 30 seconds, allowing the egg white froth to form on top. Lastly, add three drops of angostura bitters on top of the foam then take a tooth pick down the middle of each droplet creating hearts.
