Lost in Sagano

    • 1 1/2 oz. Roku Gin
    • 2 oz. The Perfect Purée Kiwi Puree, thawed
    • 2 oz. Shaker and Spoon Seaweed Bay Lime Cordial
    • 1 tsp. + garnish matcha green tea powder
    • 1 oz. half and half
    • 1 whole egg white
    • Fresh mint sprig
    • Fever Tree Citrus Tonic
Prepare chilled Collins glass with matcha powder rim and add 3-4 square ice cubes. Combine all ingredients except tonic into a mixing tin and dry shake vigorously (this will activate egg white and mix matcha tea). Add ice to the mixing tin and shake again for one minute. Strain blended contents into Collins glass, giving a nice foam top. Top with Fever Tree Tonic until the foam rises over the top of the glass. Dust matcha green tea powder on top of the foam and garnish with fresh mint.
