• | 2 oz. demi-glace |
Method: | |
1. | In a saucepot combine Prickly Pear puree and demi-glace. Bring mixture to boiling; reduce heat to medium. Simmer, stirring frequently, until mixture is reduced by half. |
2. | Transfer to a bain marie to hold for service. |
