• | 1 1/2 oz. rhum agricole |
• | 1 oz. The Perfect Purée Pear Puree, thawed |
• | 1/2 oz. spiced simple syrup |
• | 1/2 oz. fresh lemon juice |
• | Ice cubes |
• | Pear slice, lemon twist or candied lemon peel, for garnish |
For the Spiced Simple Syrup: | |
• | 2 cups sugar |
• | 1 1/2 cups water |
• | 1/4 cup allspice berries |
• | 1/4 cup cloves |
• | 2 cinnamon sticks |
• | 3 nutmegs |
• | 1 tbsp. whole black peppercorns |
• | 1 tsp. vanilla extract |
Method for the Spiced Simple Syrup: | |
1. | Combine all ingredients except vanilla in a saucepan over low heat. |
2. | Bring to a boil and turn off heat. |
3. | Strain into a clean glass container and add vanilla extract, then shake to combine. |
4. | Keeps three weeks refrigerated. |
Method for the Cocktail: | |
Shake all ingredients and strain into a chilled glass. Garnish and serve. | |

This drink pairs well with roasted turkey with sage dressing, roasted duck or salty cheeses. |
